The renowned ham connoisseur Manuel López learnt from a very young age, at his family’s stall in Barcelona’s iconic La Boquería market, how to identify the finest cuts of Iberian ham. His experience travelling to the dehesas of the south-east of the Iberian Peninsula and working with the finest artisan curing houses has made him one of the country’s leading experts. His craft, which is entirely artisanal, involves identifying the finest livestock farms, supervising the curing of the ham in the cellars, and offering the selected cuts at Reserva Ibérica outlets at just the right moment.
